In the food, beverage and pharmaceutical industries, process temperature is critical to maintain product quality and standards. The risks to public health place these industries firmly in the spotlight, because the effects of getting the cooking and freezing processes wrong can be disastrous for the business as well as its customers.

However, not all processes are equal. Each process has its own challenges in terms of space, duration and environment (steam, submersion in water or oil). The Datapaq range of thermal profiling units and barriers allows temperature logging equipment to pass through the treatment ovens connected directly to the process. This type of system is unique in its ability to maintain the operability of sophisticated recording and storage electronics at temperatures in excess of 1000°C.

The units are also equipped with sophisticated software that allows users to set parameters like the ramp and soak times required to meet a desired specification. On completion, a printout of actual versus desired values shows any deviations from set point.

As an example, the Food Tracker System is comprised of the Insight software, a datalogger and a selection of protective thermal barriers and thermocouples. It offers an accurate and reliable means of measuring product and environmental temperatures, an essential requirement for HACCP data analysis, regulations and process validation. All thermal profiling systems can include enhancements, such as humidity measurement, food tray and thermocouple jig, as well as the TM21 radio telemetry system for real-time temperature monitoring.

The most frequent food processing applications for Datapaq temperature profiling systems include: poultry and meat processing; seafood processing; baking and pasteurisation.
